Avocado and Shrimp Salad

INGREDIENTS

  • 2 ripe avocados

  • 250g cooked and peeled shrimp

  • 1 cucumber

  • A handful of mixed salad greens (arugula, spinach, or lettuce)

  • 1/4 red onion (optional, for added flavor)

  • Juice of 1 lemon

  • 2 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper, to taste

  • Fresh mint leaves for garnish (optional)

PREPARATION

  1. Begin by peeling the avocados and cutting them into chunks. Immediately drizzle them with lemon juice to prevent browning.

  2. Peel the cucumber, dice it, and add it to the avocados.

  3. If you're using red onion, thinly slice it into rings.

  4. In a large salad bowl, arrange the mixed salad greens.

  5. Add the avocado chunks, cucumber, shrimp, and red onion rings (if using).

  6. In a small bowl, prepare the dressing by mixing olive oil, the remaining lemon juice, salt, and pepper.

  7. Drizzle the salad with the dressing, ensuring all the ingredients are well coated.

  8. Garnish the avocado and shrimp salad with fresh mint leaves (if available).

    This salad is fresh, light, and full of flavors. It makes an excellent light summer meal or a starter for a more substantial dinner!
