Chicken with Boursin Cheese and Herbs

INGREDIENTS

  • 4 boneless, skinless chicken breasts

  • 1 package of Boursin Garlic and Fine Herbs cheese (or another flavor according to your preference)

  • 1 cup sliced mushrooms

  • 1/2 cup chicken broth

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • Fresh chopped herbs (parsley, chives) for garnish

PREPARATION

  1. Chicken Preparation: Season both sides of the chicken breasts with salt and pepper.

  2. Cooking the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through (about 5-6 minutes on each side). Remove the chicken from the skillet and set aside.

  3. Sauce Preparation: In the same skillet, add the sliced mushrooms and sauté until tender.

  4. Adding Boursin Cheese: Reduce the heat to medium, add the Boursin Garlic and Fine Herbs cheese to the skillet with the mushrooms. Stir gently until the Boursin is melted and forms a creamy sauce.

  5. Adding Chicken Broth: Add the chicken broth to the Boursin sauce and mix well. Simmer for a few minutes until the sauce thickens slightly.

  6. Returning Chicken to the Skillet: Return the chicken breasts to the skillet with the sauce. Ensure they are well coated with the Boursin sauce.

  7. Serving: Garnish the chicken with freshly chopped herbs (such as parsley or chives) and serve hot. This dish pairs very well with rice, pasta, or steamed vegetables.
