Grilled Chicken and Citrus Salad

INGREDIENTS

For the salad:

  • 2 grilled chicken breasts, sliced

  • 4 cups mixed greens (romaine lettuce, arugula, spinach, etc.)

  • 1 pink grapefruit, peeled and segmented

  • 1 orange, peeled and segmented

  • 1 avocado, diced

  • ¼ cup lightly toasted sliced almonds

  • 2 tablespoons fresh mint, chopped

For the Dressing:

  • Juice of 1 lemon

  • Juice of 1 orange

  • 2 tablespoons olive oil

  • 1 tablespoon honey

  • Salt and pepper to taste

PREPARATION

  1. Prepare the Salad: In a large salad bowl, arrange the mixed greens.

  2. Assemble the Salad: Add the grilled chicken slices, grapefruit and orange segments, diced avocado, toasted almonds, and fresh mint to the bowl.

  3. Prepare the Dressing: In a small bowl, whisk together the lemon juice, orange juice, olive oil, honey, salt, and pepper.

  4. Dress the Salad: Pour the dressing over the salad and gently toss to coat all the ingredients evenly.
