Grilled Salmon with Mango Salsa

INGREDIENTS

For the Grilled Salmon:

  • 4 salmon fillets

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon lemon zest

  • Fresh lemon wedges, for serving

For the Mango Salsa:

  • 2 ripe mangoes, peeled, pitted, and diced

  • 1/2 red onion, finely chopped

  • 1 jalapeño pepper, seeds removed and finely chopped

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper, to taste

PREPARATION

  1. Prepare the Mango Salsa: In a bowl, combine diced mangoes, red onion, jalapeño pepper, cilantro, and lime juice. Season with salt and pepper. Mix well and refrigerate while you prepare the salmon.

  2. Prepare the Grilled Salmon: Preheat your grill to medium-high heat. Pat the salmon fillets dry with paper towels. Brush both sides of the fillets with olive oil. In a small bowl, mix paprika, garlic powder, salt, black pepper, and lemon zest. Rub the spice mixture evenly over the salmon fillets.
