Lentil Soup

INGREDIENTS

  • 1 cup dried red lentils, rinsed

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 carrot, chopped

  • 1 potato, peeled and diced

  • 6 cups vegetable or chicken broth

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground turmeric

  • Salt and pepper to taste

PREPARATION

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic and sauté until softened.

  2. Add the chopped carrot and potato to the pot and cook for another 2-3 minutes.

  3. Stir in the rinsed red lentils, vegetable or chicken broth, ground cumin, and ground turmeric.

  4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until the lentils and vegetables are tender.

  5. Season with salt and pepper to taste.

  6. Serve hot and garnish with a squeeze of lemon juice and fresh cilantro if desired.
