Spicy Vegan Noodles with Asian Flavors

INGREDIENTS

  • 200g of vegan noodles

  • 150g of vegan meat (for example, Gusta)

  • 2 tablespoons of sesame oil

  • 2 cloves of minced garlic

  • 1 inch of fresh grated ginger

  • 1 cup of sliced mushrooms

  • 1/2 cup of thinly sliced carrots

  • 3 tablespoons of soy sauce

  • 2 tablespoons of sesame sauce

  • Handful of chopped fresh cilantro

  • Salt and pepper to taste



PREPARATION

  1. Cook the vegan noodles according to the package instructions. Drain and set aside.

  2. In a skillet, heat one tablespoon of sesame oil over medium heat. Add the vegan meat and brown it for a few minutes. Remove from the skillet and set aside.

  3. In the same skillet, add another tablespoon of sesame oil. Add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.

  4. Add the sliced mushrooms and thinly sliced carrots. Sauté for 3 to 4 minutes until they are slightly tender.

  5. Add the precooked vegan meat back into the skillet.

  6. Pour the soy sauce and sesame sauce over the ingredients in the skillet. Mix well to coat evenly.

  7. Incorporate the cooked noodles into the skillet and gently toss to integrate the flavors.

  8. Season with salt and pepper according to your taste.

  9. Remove from heat and garnish with chopped fresh cilantro for a refreshing touch.
